Decade Down Uncut

Decade Down is a straight bourbon where we used a combination of our finest “honey” barrels between 5 and 7 years old. 25% of the bourbon used had been in sherry barrels for 12 months. Our first batch of Backbone Uncut (our first prod-uct) was released in December 2010 thus the reason for this special anniversary edition. We plan to do a new “Decade Down” release every year going forward.

Tasting Notes: Our blend begins on the palate with rich, caramel notes. Subtle spices and dry sweetness start to make way, following with a smooth oak finish while the sherry barrels add a pleasant mouth feel. Decade Down is best sipped neat with a drop or two of water.

Distilled in Indiana from a mashbill of 74% corn, 21% rye, and 5% malted barley, the nose has notes of toasted bread, almond butter, honey-roasted peanuts, and cara-mel topping. The palate is creamy and sweet, with rich oak, well-integrated spice, and peanuts—densely packed flavors that compose a full and rich body. The finish boasts admirable length, with savory nuts and semi-sweet chocolate. This has delightful sweetness throughout; everything is perfectly ordered and arranged. (2,700 bottles) —Ted Simmons
